The holiday season is in full swing & it’s not complete without some baking! Today I am sharing a super easy peppermint oreo cookie recipe + 9 other recipes to try this season.
Happy Monday y’all! I am so excited to kick this week off by joining Laura Leigh’s 4th Annual Virtual Cookie Exchange. Baking cookies is one of my favorite holiday traditions, so I was ecstatic about joining this year. Each year Tyler & I will spend an evening baking cookies, making chex mix & watching Christmas movies, and this cookie exchange is making me so excited to do that. We don’t typically do the sugar cookie + cookie cutter type of baking (I’ll be honest, I don’t love sugar cookies…), so we switch our recipes up each year. Think crinkle cookies, gingerbread + all the chocolate (bonus points if there is peppermint involved).
I stumbled upon this recipe on Pinterest, and was so pleasantly surprised by how yummy these cookies are. I took a batch over to my family last night & they LOVED them. The best part about this recipe– it is incredibly easy. And it uses minimal tools, which Tyler appreciates when it comes to doing the dishes! ha! We will definitely be making another batch of these peppermint oreo cookies though.

Peppermint Oreo Cookie Recipe
Ingredients:
- 1 box of white cake mix
- 1 stick of unsalted butter, softened
- 4 ounces of cream cheese, softened
- 1 large egg
- 1/2 teaspoon peppermint extract
- 1/2 vanilla extract
- 1 cup of Oreo chunks
- 1 cup of Andes Peppermint Crunch pieces
- 1/2 dark chocolate chips
Directions:
- Mix the cake mix, butter, cream cheese, egg & extracts together until a soft dough forms. I used my kitchen aid mixer.
- Stir in the Oreo chunks, peppermint pieces & dark chocolate chips. I used the flat beater Kitchen Aid attachment on stir speed. I like using this attachment because it really blends the oreo pieces into the dough.
- Refrigerate the dough for 30-60 minutes. I typically find 30 minutes is sufficient.
- Preheat the oven to 350 degrees.
- Roll the dough into 1.5-2 inch balls, I can get anywhere from 24-30 balls from the dough.
- Bake on a parchment paper lined baking sheet for 10 minutes. Do not over bake. They will look soft & slightly underdone.
- Let the cookies sit on the baking sheet for a few minutes, and then transfer to a sheet parchment paper to completely cool.
- Best served with peppermint ice cream. Enjoy!
