Sometimes cooking is just good for the soul, & I have a delicious recipe for you to try this summer! Today’s Easy Mediterranean Pasta Recipe is on repeat in our house.
Happy Thursday y’all! I am switching thing up a bit on G&G and sharing my first ever recipe! I love cooking. There is something about about ending a work day cooking a homemade meal. It relaxes me, and something I love to do with Tyler. But let’s be real, I am no chef. I like an easy recipes I can tweak to my liking and today’s checks off all of those boxes!
This Mediterranean Pasta recipe I’m sharing today is one my mom has made for years, and always a crowd pleaser. We’ve made a handful of times this summer, so I thought I would share it with y’all today!

Easy Mediterranean Pasta Recipe
Ingredients::
- 1/4 c olive oil
- 2 cups of grilled chicken (when we grill out we always through a few extra chicken breasts on there so we’ll have it to make this dish later in the week), cubed
- 3 cloves of garlic, chopped
- 1 yellow onion, chopped
- 1 yellow pepper, chopped
- 1 red pepper, chopped
- black olives (we always leave this out because Tyler isn’t a fan of olives)
- several sun dried tomatoes (in oil), chopped
- 1 can of artichoke hearts, chopped
- 1/2 pack of frozen chopped spinach, thaw & pat dry
- 1 cup dry white wine
- fettuccine pasta (or substitute of choice)
- crumbled feta cheese for topping
*I love this recipe because if there is an ingredient you don’t like, you can just leave it out & on the other end of that, if there is an ingredient you love you can add more if you’d like!
Easy Mediterranean Pasta Recipe Steps:
- Saute garlic & oil in a large skillet
- Add peppers & tomatoes
- Cook over medium heat until peppers are tender
- Add spinach, artichoke hearts, chicken & mix well
- Add wine
- Cover & simmer until ready to serve
- Cook pasta of choice & toss with chicken mixture
- Top with feta & enjoy!
It really is that easy. The hardest part is chopping all the veggies & squeezing the moisture out of the spinach.
Tyler & I will enjoy this over regular pasta, my favorite edamame mung bean fettuccine (for a low carb option) or even cauliflower gnocchi! A classic fettuccine is my favorite combination, but there are so many different ways to switch up.
Also, this mediterranean mixture is so good left over throughout the week. You can top homemade pizza with this, use it in a wrap, eat it with pita chips, over rice, etc. It is also great for low carb days– serve over cauliflower rice, in a low carb tortilla, on its own, etc.
